Even with all the mouth-watering dishes that I am surrounded with, I cook and have the pleasure to enjoy – the simplicity of a refreshing green salad remains tempting still! So, I thought, why not create an equally yummy green protein dressing for one to enjoy and make the salad even more irresistible?

After you make this recipe, I promise you will not go back to another store-bought green salad dressing. It is healthy, fresh, and free of preservatives! Above all, it is delicious and *whispers* great addition to a weight loss regime.

Free from preservatives and unhealthy fats, it will add a vibrant and delicious flavor to your salad, minus the guilt. It includes two detoxifying ingredients, lemon juice, and apple cider vinegar. They prevent metabolic syndrome, boost lower fat accumulation, and are linked to a reduction in body fat mass. Using olive oil (in moderation) further ensures that the vinaigrette adds flavor to the salad without adding on the calorie count. 

What are the ingredients used in Creamy Green Vinaigrette recipe?

Olive oil and apple cider vinegar are used as the dressing base. Sugar-free Dijon mustard, egg yolk, capers, and minced shallot. Fresh squeezed orange juice, lemon, and garlic. Right before topping your blender, sprinkle your refresh chopped parsley.

Grab your blender or food processor; once you have all ingredients ready, add them all into a blender or a food processor. Blend until smooth. Add salt and pepper to your taste, and your dressing is ready in just 5 minutes!

How long does homemade green protein dressing last?

Since, free from preservatives, this dressing has a shorter shelf life than the store-bought. Yet, the general rule of thumb is that acidic vinaigrette, ones using lemon and vinegar, should last the longest—generally about a week. Any change in color, taste, and smell could mean bacteria are growing and that the green protein dressing is no longer safe to eat.

How to store leftovers?

Store it in a container or mason jar, then refrigerate it. Make sure to consume it within seven days.

  • Food processor – small – 3 cup
  • Blender

Ingredients
 

  • ¼ cup olive oil
  • 1 cup packed parsley, chopped
  • ½ of large orange, juiced
  • 1 hard boiled egg yolk, discard egg white
  • 1 tablespoon capers
  • 1 teaspoon dijon mustard, sugar-free
  • 2 tablespoon apple cider vinegar
  • 1 shallot, minced
  • 1 teaspoon garlic, minced
  • salt & pepper

Instructions
 

  • Add all ingredients to a blender or food processor and blend until smooth. Continue to add salt and pepper to your taste
