Lemony Southern Style Posole

You all know that phrase, “when life gives you lemons, make lemonade.” This proverbial message was the crust and namesake of Beyonce’s visual album Lemonade. Many have shared their opinions on the artistic nature of the video, the exposed cheating in the lyrics, the credibility of Beyonce as a figure of empowerment, all the way down to conversations about the video’s “plantation chic” fashion. I decided to chart a different course and share my opinions on her grandma’s actual lemonade recipe in this week’s newsletter. What is posole soup made of?

Posole, also known as pozole, is a traditional soup or stew from Mexican cuisine. Traditionally a recipe for posole would include hominy and meat (turkey or chicken) and other ingredients such as cabbage, chile peppers, and onions. 

What is the difference between corn and hominy?

The difference between these two is that Hominy is made from field corn, which is the type of corn used to make things like cornmeal and grits. Hominy can be yellow or white. Sweet corn is yellow and can be eaten on the cob.

Can canned mustard greens be used?

Yes, canned greens can be used. However, they tend to have high levels of sodium. Make sure to drain before adding to your posole soup.

Can other types of meat be used in this recipe for posole?

Sure! Try using chicken, pork, beef, or even a vegetarian meat substitute. However, keep in mind that you’ll need to pre-cook the meat before adding it to your soup.

Ingredients

  • 2 cups turkey meat 2 smoked turkey legs chopped
  • 8 cups chicken broth or vegetable broth
  • 3 cups mustard greens chopped
  • 28 oz hominy 1 can drained & rinsed
  • 1 medium onion chopped
  • 4 tablespoons lemon juice
  • 2 teaspoons cajun seasoning
  • 1 teaspoon cumin
  • ¼ teaspoon cayenne
  • ¼ teaspoon chilli powder
  • 2 teaspoons garlic minced
  • 4 oz green chilis 1 can diced
  • cilantro

Instructions

  • In a large pot bring broth to a rolling boil. Add all ingredients and reduce the heat to medium low and simmer, uncovered, until the onions are tender.
