KC & Koko Holiday Digital Cookbook

If you’ve been here for a while, then you know that my amazing husband is also a chef. Needless to say, between the two of us, our kitchen pretty much always smells incredible. Because cooking comfort food is a passion we share, last year, we finally collaborated to create the cookbook of our dreams. 

Our holiday cookbook was so fun to make and SO well-received by you guys. Naturally, we knew we had to expand on it to bring you an even more in-depth holiday cookbook for 2021!

Spinach Dip Pinwheels make the perfect savory appetizer to start off your holiday feast. Golden-brown on the outside with a creamy and delicious filling inside, these mouth-watering pinwheels are guaranteed to be the ultimate crowd-pleasers. Don’t expect any leftovers because these tend to go quick!

Equipment

  • Measuring Tools
  • Chef’s Knife
  • Medium Saucepan
  • Hand Mixer
  • Bowl Set
  • Sheet Pan
  • Pastry Brush

Ingredients
 

  • 16 oz. cream cheese, room temperature
  • 1 teaspoon kosher salt
  • 1 teaspoon red chili flakes
  • 1 cup parmesan cheese , shredded
  • 20-24 oz. frozen spinach, thawed
  • 2 puff pastry sheet, thawed
  • 2 large eggs
  • 2 tablespoons water

Instructions
 

  • Add the cream cheese, salt, red chili flakes, and parmesan cheese in a medium bowl, then mix until smooth.
  • Preheat oven to 400°F. Turn the heat to high in a medium saucepan, then add the spinach and cook for 5 minutes, stirring occasionally. Drain any moisture and cool.
  • In a small bowl, stir egg and water together. On a lightly floured surface, place an unfolded pastry sheet. Brush with egg wash. Spread cream cheese evenly over, then sprinkle spinach. Start at the short side closest to you, roll up like a jelly roll. Cut into 16, 1⁄2 inch slices.
  • Place on two greased baking sheets (slices shouldn’t touch) and brush with egg wash. Bake for 20 minutes, until the puff pastry is golden-brown and puffed.
  • Let cool for 5 minutes, then serve warm or at room temperature.
