I was at a party and one of the guests brought watermelon salsa. It was so good I went back for seconds, thirds and fourths and made it again at home the next day.

Now, I make watermelon salsa all the time during the summer. It’s a great way to use up leftover watermelon and it’s always a hit at parties. Plus, it’s really easy to make.

Watermelon Salsa Recipe

Watermelon salsa is basically watermelon pico de gallo because it is made up of all the ingredients found in a traditional pico de gallo like onion, jalapeno, cilantro, and lime juice except you replace the tomatoes for chunks of juicy watermelon.

Watermelon: is a yummy, light, and refreshing alternative to traditionally used tomatoes. It mingles well with herbal and savory flavors.  

Fresh lime juice: adds a bit of zing and also preserves your salsa’s refrigerated life

How To Choose Watermelon?

When choosing a watermelon, there are a few things you should keep in mind. First, make sure the watermelon is heavy for its size. This is an indicator of how much water it contains. Second, look for a uniform shape and color. Avoid watermelons with bruises or blemishes. Third, tap the watermelon and listen for a hollow sound. This means the watermelon is ripe and ready to eat. Now that you know how to choose a watermelon, it’s time to get chopping!

How To Cut A Watermelon?

Cut both sides of the watermelon where the stem is and the opposite end using a chef’s knife. Then place the watermelon on one of the flat sides. Vertically cut along the edge separating the rind from the flesh. 

After the rind has been removed from around the entire watermelon cut it in half and place it on the flat side. Make several horizontal cuts followed by vertical cuts creating long cubes that can be diced.

What do I Serve with Watermelon Salsa?

This light, refreshing, and flavorful pico de gallo goes well with tortilla chips or on top of grilled seafood and poultry.

Tips For Making Watermelon Salsa

  • To store, refrigerate leftovers for up to 3 days in an airtight container
  • Shallots can be used to substitute red onions; they have a milder flavor.
  • Pre-cubed watermelon from the grocery store can save you some time.
  • If watermelon isn’t your favorite, It’s easy to substitute in any of your favorite melons.

Ingredients
 

  • 4 cups watermelon, seeded & diced
  • 1-2 fresh jalapeno(s), seeded & finely diced
  • cup fresh cilantro leaves, chopped
  • cup red onion, diced
  • 1 ½ tablespoons honey
  • 2 limes, juiced
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper

Instructions
 

  • Whisk lime juice, honey salt and pepper in a bowl until mixed.
  • Combine all the remaining ingredients into a large bowl and drizzle over the lime/honey mixture. Toss and serve or refrigerate in airtight container.

  1. Not only am I digging this watermelon salsa, I feel what you said about reclaiming your blog! I have a consistency issue on my blog too as I’ve been dealing with some health concerns, work, etc. etc. It’s always something, right? Anyway, I cannot wait to try this salsa! Love it! 🙂
